It's my favorite time of year - Spooky Season! 🎃
This weekend we carved our first jack-o-lantern of 2021, Harvey the Skeleton. I had some family over while we were gutting Harvey and was surprised to hear that some people throw all that stringy goodness inside away.
Pumpkin seeds are an amazing source of plant protein. This one pumpkin gave me 2 cups of seeds - that equals over 65 grams of protein and 16 grams of fiber.
Not mentioned: the astronomical amount of minerals and vitamins (they're a great source of iron for those who aren't huge meat eaters), making pumpkin seeds a snack I recommend to my clients all year long.
Pumpkin is rich in vitamins, minerals, and antioxidants. It decreases inflammation, and is a great base for many sweet and savory dishes.
While I personally don't love the texture, my dogs LOVE pumpkin and hover underneath us when we are carving waiting for anything that might fall from the heavens for them to enjoy 😂
